Family Friendly Baking with Anchor – Mini Victoria Sponge Cakes

We love baking here so when Rowan had a morning off from meithrin this week, we ceased the opportunity to makes some cakes.  Over the summer holidays I had been trying out new ways to make cupcakes a bit more exciting and tried turning them into mini Victoria sponge cakes.  These have become a firm favourite with the boys so I was not surprised when Rowan asked to make some.  We had also been sent some new products and vouchers from Anchor Rewards Club to help us bake a family friendly recipe using Anchor butter and cream, both of which I use any way when baking the mini Victoria sponge cakes.  
Here is how you make this delicious little cakes:
Ingredients: (makes about 14=16 cakes you can double the ingredients up if required)

4oz Self Raising Flour
A pinch of salt
 4oz anchor butter   

4oz caster sugar
2 large eggs lightly beaten
filling:
strawberry jam
anchor cream (squirty or double/whipping cream)
icing sugar to finish
Method:
  • Pre heat oven to 190 oC/375 o f or Gas mark 5
  • weigh out the flour, sugar and salt and add to a mixing bowl
  • mix together
  • weigh out the butter and add to the dry ingredients
  • beat lightly two eggs and add them to the rest of the ingredients
  • mix the ingredients 
  • place cake cases in a baking try/cupcake tin
  • divide the ingredients evenly between the cake cases
  • smooth the top of the mixture if possible with the back on a spoon (helps the cake have an even top)
  • place cakes in the preheated oven and bake for 15-20minutes (until golden brown)
  • remove from oven and leave to cool once cooked.
  • Once cooled remove cakes from cake cases and cut in half 
  • Spread strawberry jam on the bottom half of the cake
  • If using double or whipping cream beat some up in a bowl until thickened enough to spread on top of the jam. 

  • If using the squirty cream like I did this on this  occasion squirt your desired amount on top of the jam.

  • place the top half of the cake on top of the bottom half
  • dust with icing sugar to finishYou could also use a square baking tin to bake your cake mixture in and once baked and cooled cut out the cakes using a circle cutter to achieve the mini sponge cake shape.   

 

Then if your house is anything like ours dive straight in and enjoy these delicious little cakes.  I always double up the ingredients to make a larger batch as cakes don’t last five minutes here! I think once dad of three and the older boys got home these were polished off very quickly.  I’m sure it won’t be long until I’m asked to make some more.
