Homemade Coconut Ice

One of my all time favourite treats has to be Coconut Ice, I remember making it as a child with my mum but since then have bought it in local sweet shops.  
I don’t know why but this week I had the urge to attempt to make it myself again.  Dad of 3 is always keen to know what is in his food and believes that natural products are healthier and better for us.  I was pleasantly surprised at how simple coconut ice is to make when I found the recipe.   I had all but the condensed milk which was easy enough to pick up from the local supermarket.  
So yesterday afternoon while dinner was cooking I took the opportunity to give the recipe a go.  It has to be one of the most simple recipes I have ever used.  The mixture was easy to mix and combine.  The messiest part has to be shaping the two colours and then combining them together.  But the hardest part for me was leaving the Coconut Ice to set!  
Fancy having a go?  well here’s the recipe:
250g Condensed Milk
250g Icing Sugar ( little extra for dusting)
200g of dessicated Coconut
a drop of red food colouring.  
Method:
1. Using a wooden spoon Mix the Icing sugar into the condensed milk until fully combined.
2. Stir in the dessicated coconut.  The mix will become stiff, you can use your hands if you want.
3. Split the mix into two bowls.  
4. In one of the bowls add a drop or two of the red food colouring and mix through until evenly mixed.
5. Dust a board with icing sugar and turn box mixtures out on to the board.
6. Using your hands shape each of the mixtures into rectangles.
7. Place one of the mixtures on top of the other and using a rolling pin roll out.  You will have to reshape the mixture with your hands to keep the shape every few rolls.  Roll the mixture out until it is around 3 inches thick.
8. When happy with the shape transfer onto a board or plate to set.
9. Leave for a minimum of 3 hours or if possible overnight to set.
10. Once set cut up into squares and enjoy.
The Coconut Ice will keep for a month if stored in an airtight container.  You could put it in little bags or boxes as gifts for people.  You could also shape the coconut ice differently or if you prefer one colour you can leave out steps 3 and 4.  I can’t tell you how delicious the coconut ice is but its one to try for yourselves.
